Tasting Notes
Handpicked fruit was separated into two parcels. One completely de-stemmed and partially crushed and fermented in stainless steel. The other parcel was fermented in an open top concrete vessel with lightly treaded100% whole clusters. The wines were pressed to a combination of barrique, demi, and puncheons (some new).
