The 2022 Patrick Underwood Dash Farms Chardonnay is a rare and captivating expression of high-altitude Central Victorian terroir. Grown at 477m on granite-rich soils and made in tiny quantities, this Chardonnay is wild-fermented and matured in large-format Slavonian and French oak for layered texture and nuance. The cool, wet vintage brought challenges—but also delivered fruit of exceptional character, bursting with perfume and acidity. Patrick’s experience working harvests in Barbaresco, Burgundy and Victoria shines through in this wine’s finesse, restraint, and compelling complexity.

On the nose and palate, it’s a sensory thrill: white peach, lime, green olive, fennel, and a hint of marzipan, wrapped in saline spice and chalky texture. There’s a sake-like purity, a gentle bitterness that adds intrigue, and a finish that’s bright, flinty and mouth-watering. Well, here’s a very beautiful wine. It’s floral, saline, spicy, green olive and white peach, fennel, lime and mandarin. It’s fine, flinty and lightly chalky, nutty and slightly sake-like too, and it delivers flavour with such finesse and grace. It’s pure and long, and just a flat out wonderful thing to drink. Bright and beautifully made. That lick of salinity on the finish is so mouth-watering and inviting. Yes.

In a great place. Fine boned, a little glossy and richer than expected or read above, with pleasing green almond/herbal bitterness and fresh stone fruit following through. Even a touch of marzipan in here, sake-like as GW aptly says. Commplex, layered yet compact. Yes thanks.
