Tasting Notes

This wine is sourced from the Allan Rock and Wylco vineyards plus a small percentage from the Wills Domain vineyard blocks seven and thirteen. Picked in the cool of the morning, the fruit was gently destemmed and pressed and settled overnight before
being racked to barrel and allowed to ferment naturally. The wine remained on lees in a barrel, with minimal batonage for nine months before being racked filtered and bottled. To preserve the mineral limey style of our Eightfold Chardonnay only a small percentage went through malolactic.

Subtle melon, with a complex aroma of cashews and brioche. Lovely, rich, and soft lingering. The mid-palate is fruity and creamy with a fresh zesty acidity.

"A fine Margaret River Chardonnay, which comes from a pair of local vineyards, Allan Rock and Wylco, with a dollop from estate plantings, the wine underwent a natural fermentation in barrel, before nine months maturation. Malolactic fermentation is restricted to a small portion of the wine. A gleaming straw hue, the nose shows that this is a wine of good intensity with notes of stone fruits, hazelnuts, peaches, melon, a flick of well-integrated oak and a whiff of grapefruit. That serious intensity is even more evident when we move to the palate. The texture is supple, the wine well balanced and there is a lingering finish. Enjoy it now and for the next five years."
