Distilled from 100% Blue Weber agave grown in the lowland heat of Jalisco, Rooster Rojo Blanco is built on tradition, but made with clarity in mind. The agave is slow-roasted in traditional masonry ovens, then double distilled and blended with spring water filtered through volcanic rock. The ABV sits at 38% - lower than the standard 40, yes - but this isn't a shortcut. It's a decision. It softens the heat just enough to let the raw flavours stretch out and take up space.
And those flavours are unmistakable. The nose opens with clean roasted agave, raw lime skin, white pepper, and a green, herbal edge - almost like crushed coriander stem or jalapeNo oil. There's a whisper of sea salt and hot stone beneath it, dry and mineral. This isn't sweet. It's sharp. Alive. Focused.
On the palate, it moves fast. First hit: roasted agave and lime pith. Then comes green capsicum, raw sugarcane, and the light snap of citrus oil. It's not sweet. It's not soft. But it's remarkably smooth - not because it's been smoothed out, but because it's been cleanly made. There's no glycerin. No cloying finish. Just fresh vegetal tones balanced with a lick of salinity and spice.
