Tasting Notes
The 25 Year Old Sherry Oak is where The Macallan’s romance with European oak reaches operatic intensity. This is not a whisky. It’s a requiem sung in dried fruit, ancient spice, and oaken poetry.
In the glass, it glows deep amber — not brown, but the colour of candlelight filtered through cathedral stained glass. The nose is haunting: sultanas soaked in oloroso, toasted hazelnut, clove, rich cocoa, and black cherry preserves. Beneath it, the noble bitterness of walnut skin and aged wood varnish. There’s incense and citrus peel. Every note smells old — not tired, but storied.
On the palate, it’s deep and deliberate. Treacle, fig cake, antique leather, and polished oak come first. Then wave after wave: gingerbread, sherry-soaked plum, nutmeg, and dark chocolate truffle. The mouthfeel is rich and mouth coating, but never cloying — like velvet with edge.
Mid-palate, hints of espresso crema, dried orange rind, and sandalwood emerge. It’s a procession of flavours, not a crowd. Every step choreographed by time.
The finish is endless — warm, spiced, and slightly dry. It leaves behind a glow of fruit, wood, and reverence. A dram for silence, for reflection. A monument in a bottle.
