Westfield John Kosovich Wines is a boutique, family-owned estate founded by John Kosovich in 1978 in the heart of Margaret River. The winery combines meticulous vine-to-bottle attention with a passion for small-batch, terroir-driven Cabernet Sauvignon, handcrafting each release to express the region’s maritime influence and unique soils.
The 2004 Cabernet Sauvignon is drawn from a single vineyard block in the Wilyabrup subregion, planted on gravelly loam over clay. Fruit was hand-harvested in the cool early hours of April, berry-sorted, then fermented in open-top micro-fermenters with gentle, daily plunging to build fine tannin structure. After pressing, the wine matured for 20 months in French oak barriques (35 percent new), allowing seamless integration of oak spice and supporting the wine’s natural concentration.
In the glass, the 2004 Westfield John Kosovich Cabernet presents a deep garnet core with subtle brick highlights at the rim. The bouquet is richly layered, offering cassis, black olive and dark chocolate, underscored by cedar and dried herb nuances. On the palate, it is medium-full and elegantly framed, delivering flavours of blackcurrant, tobacco leaf and graphite, with finely woven tannins and bright acidity. The finish is long and savoury, with hints of forest floor and clove. This Cabernet is at a poised stage of maturity and pairs beautifully with grilled rib-eye, slow-braised beef or aged Gouda.
