Tasting Notes
Classic cool climate Bordeaux blend exhibiting precise definition of fruit flavors, tannin backbone and the complexity of a Bordeaux blend of four grape varieties. Two years maturation in finest quality oak barrels. Blackcurrant, dark cherry nose with hints of cigar box, tea leaf and mint adding complexity. The palate is medium bodied with richness and intensity supported by finely cut, soft integrated tannins. Allinda Cabernets will continue to improve with careful cellar maturation in the bottle for 10 to 15 years.

The palate displays excellent weight and focus, beautifully complemented by fine texture and chalky tannins, offering classic structure and a splendidly long finish."

"Always good to find wines available with some serious development (for what it is worth, the current release Grange is younger than this wine). The blend here is Cabernet Sauvignon 47%, Petit Verdot 26%, Cabernet Franc 17% and Merlot 10%. The juice was hand plunged in open fermenters, with 20% of it undergoing post fermentation maceration. Subsequently, it received 24 months maturation, with twelve of those months in French coopered European oak barriques. Deep red, the nose gives aromas of olives, dark fruits, cedar/cigar box notes and spices. A hint of warm earth with notes of red cherries intertwined with those darker fruits with good focus. Hints of beef stock and soy on the palate. Bright acidity helps carry good length through to fine tannins on the finish. Even though the wine already has some development, it can easily be cellared for a further 6 to 10 years, probably longer."

"This is a blend of cabernet sauvignon, petit verdot, cabernet franc and merlot made in quite a Bordeaux-like style. It’s elegant and medium bodied with a fine, focused palate structure. A savoury mix of dark chocolate and leafy tobacco on the nose. The palate has a minerally edge to it with a lifted acidity and neatly integrated oak with chalky tannins contributing to a dry finish."

"One should not underestimate Yarra cabernet, an idiom that is often reticent in its youth, despite a profound capacity for age. With climate change, we are more likely to see expressive youthful wines. Such as this. A quintessential Bordeaux blend in descending order of makeup from cabernet to petit verdot, franc and merlot, made sustainably and aged for 24 months in French and Russian wood. Berry and cherry scents. A seam of well appointed oak. Green bean. Good freshness. Bay-leaf. This is very forward of fruit, yet the tannins are an immaculately woven stage for mid to long-term ageing."
