If Tasmanian whisky were a novel, Lark would be its opening line — bold, poetic, and instantly captivating. Established in 1992, Lark was among the first to defy Australia’s sleepy whisky laws and resurrect a distilling tradition lost for over a century. Today, it stands as the standard bearer for modern Australian whisky, with its Dark Lark series being one of the most ambitious expressions of that legacy.

The 2025 release of Dark Lark is not a whisky for the faint-hearted or the sweet-toothed. It arrives cloaked in mystery and mischief — a nocturnal dram built for velvet nights and introspective sipping. There’s no age statement on the bottle, and that’s no oversight. This is a whisky that isn’t about ticking age boxes but about capturing mood, tone, and texture.

At first nosing, one is greeted with brooding intensity — dark fruits macerated in spiced liqueur, black cherries, blood plums, and cacao nibs. There’s an almost gothic elegance to it, like a candlelit study full of leather-bound volumes and midnight jazz. The 2025 edition, in particular, is a masterstroke in cask selection and blending discipline.
