Tasting Notes

This vineyard is literally within one kilometre of the coastline, with a direct line of sight right over the water. Sourced from the North part of this vineyard, right next to the ocean. Planted in 1994, Old sparkling clone – IVI10. Sandy loam over limestone.

No pre-ferment racking, pressed straight to barrel, all the lees. Wild ferment, fermented in barrique from Mercurey, 20% new. No Malolactic. Elevage on full solids for 9 months.

"“Barrel fermented with full solids; matured in 20% new French barriques with the new barrels going through mlf. A bright green gold. Savoury with aromas of stone fruits, pink grapefruit, a little hazelnut and some complex marine scents. Tightly wound, chalky, balanced and long. And, as good as this is now, in another six to 12 months or so, it will really be in the strike zone.”"

Hazelnut, grapefruit, seaspray, vanilla custard and grilled peach characters move towards preserved citrus and seaweed. It’s complex, it’s engaging and it’s persistent. It’s also in need of time.""
