Tasting Notes
Genre: Rustic Reverie — Fruit, Oak, and Hillside Air
Matured in ex-red wine casks from the Adelaide Hills, this is a whisky that wears its terroir with pride. Fruity, rounded, and just a little wild — it’s a countryside dram built on sunlight and time.
Nose: plum skin, cherry wood, vanilla bean, and toasted oak. There’s a lifted note of red apple and baking spice.
On the palate: warm and generous — stewed stone fruit, clove, raspberry jam, and caramelised malt. Tannins from the wine cask give grip, structure, and a soft dryness on the sides of the tongue.
Mid-palate: dried cranberry, cocoa nib, roasted nuts. The red wine influence is clear but never overpowering — it’s an accent, not a costume.
Finish: medium-long with a fading cherry note and touch of cinnamon. A great gateway into Aussie wine-cask whisky with plenty of personality.
