Tasting Notes

The colour is a step deeper than its younger sibling — warm amber with a gentle copper edge, hinting at a touch more oak, a touch more time. It clings to the glass with a little more weight, the kind that suggests something broader, more considered.

 

The nose leans into dark caramel and toasted hazelnut, with stewed pear and orange zest tucked underneath. There’s a softness to it, but it’s more layered — vanilla bean and baking spice woven together like the scent of a warm kitchen in winter. Everything feels familiar, but more assured.

 

On the palate, it’s silky and rounded, with a richness that unfolds slowly. Toffee apple, cinnamon bark, a hint of cocoa — the sweetness is measured, not indulgent, and balanced by oak that lends shape without sharpness. Through the mid-palate, there’s a flicker of dried apricot, a suggestion of clove, and a quiet hum of French oak tannin that gives it length.

 

The finish is calm, gently spiced, and quietly persistent — like the last embers of a fire.

 

In summary: St-Rémy Signature is a step up in structure and tone — still approachable, still easy to enjoy, but with a bit more presence. It holds your attention without demanding it. A spirit for slow evenings and slower conversations.
