This exceptional spirit is fermented using wild sourdough yeast cultivated in-house, paying homage to Portland’s celebrated artisan bread culture while introducing a unique complexity rarely found in whiskey.

Made from 100 percent malted barley, the whiskey undergoes ale-style fermentation before being double pot-distilled and matured in new American oak casks. Each barrel is carefully hand-selected to highlight its expressive, fermentation-forward character, resulting in a whiskey that is both vibrant and nuanced.
