Hand harvested and whole bunch pressed to preserve purity, this sparkling wine undergoes an 8-month fermentation in old oak barrels, enhancing its complexity and depth. After tirage, the bottles rest for an impressive 7 years on their secondary yeast lees, imparting a luxurious texture and nuanced character.

Visually, this wine presents a delicate pale-yellow hue. The nose is inviting, revealing warm aromas of creamy, toasty brioche intertwined with a subtle hint of lemon balm. On the palate, it is wonderfully creamy with a gentle chalky texture that gracefully transitions to a bright, citrus-infused finish. The extended lees aging of 80 months enriches the wine with layers of creaminess and a refined, bread-like complexity that distinguishes it from typical sparkling wines.

This is 100% chardonnay, whole-bunch pressed and sent to old oak for fermentation. Left for one year before secondary fermentation in the bottle and five years' bottle ageing on lees before disgorgement. A bright yellow–green. A complex bouquet with yellow fruits, acacia honey and just-out-of-the-oven baked goods. Very even on the long, chalky palate. A bargain, really, at this price.

Light, bright yellow colour. Lots of bready/toasty lees development; evidence of long ageing on lees and then ageing post-disgorgement. Roasted nut and subtle butter developed chardonnay characters. Lovely wine, mellow and appetisingly dry but balanced finished. (Clone 124 chardonnay, fermented in seasoned barrels, then aged 7 years on lees in the bottle. 2 grams/litre dosage; crown capped)
