The fruit is carefully hand-picked, sorted, and destemmed before fermentation in half-tonne open fermenters, with an emphasis on retaining whole berries to enhance aromatic complexity. A distinctive touch includes the addition of frozen Viognier skins to select fermenters, contributing to the wine’s layered perfume. The 2022 vintage was aged for 15 months in French oak barriques, 30% of which were new, imparting subtle depth and structure.
