TASTING NOTES

Domaine Francois Raveneau Chablis 1er Cru Butteaux 2015 is a remarkable expression of Chablis, crafted from a warmer and more generous vintage that brings a lush, fruit-driven character to the forefront. This Premier Cru wine stands out with its opulent and fleshy style, a beautiful contrast to the typically taut and mineral-driven 2014 vintage.

On the nose, it reveals a richer bouquet featuring delicate notes of apricot blossom and subtle butteriness, offering an inviting aromatic profile that balances elegance with depth. The palate is defined by vibrant acidity that enlivens the wine, providing a long, salty, and mineral finish that perfectly complements its full-bodied texture.

Sourced from a premium private cellar, this wine reflects the distinctive terroir of Chablis, known for its limestone-rich soils that impart a signature crispness and minerality. The 2015 vintage’s warmer climate allowed for a more generous ripening, resulting in a wine that maintains the precision expected from a Premier Cru while embracing a rounder, more approachable style.

This Chablis 1er Cru Butteaux is an excellent choice for those seeking a sophisticated white wine with complexity and balance, ideal for pairing with seafood, poultry, or creamy dishes. Its combination of richness, acidity, and mineral tension showcases the mastery of Domaine Francois Raveneau and the unique qualities of the Chablis region.

The 2015 Chablis 1er Cru les Butteaux escaped any damage by hail and is, in Isabelle’s opinion, the most classical and Chablis-like, whereas other wines express the growing season. It has a pretty, perfumed, perhaps exotic bouquet compared to the other cuvees this year and is very expressive, with apricot blossom emerging with time. The palate is very well balanced with a precise line of acidity and, again, is very expressive with a shimmering, quite captivating finish that exudes both mineralite and fruit intensity. This has turned into an outstanding Butteaux that punches above my prediction from barrel.

Since 2010, Isabelle Raveneau has deftly slipped into the daily running of the most revered Chablis domain of them all. When we met up I wanted to know a little more about how she became the next generation to tend the vines. Her journey was certainly not a direct one. It rather zigzagged its way back to Chablis. Winemaking found her, not the other way round. Growing up, there was no expectation of continuing the winemaking tradition and instead she did what normal young people do: backpacked around Australia, working as a waitress then in an office job in England where she clearly honed her almost fluent English, enjoying hobbies such as handball where she played for the (more...)

Firm, toasty nose of very ripe fruits. Good attack on the palate, with flesh, texture and fine concentration. Restrained and elegant, there is balance to the taut character, and considerable minerality on the long finish. (William Kelley)

As Butteaux is a warmer vintage, it is not surprising that the inherent generosity of the 2015 vintage is in evidence in this lovely wine. The bouquet wafts from the glass in a lovely blend of pear, apple, beeswax, chalky soil tones and a topnote of spring flowers. On the palate the wine is deep, full-bodied and a bit more fruit-driven in personality than the Montee de Tonnerre, but with a very good spine of acidity running the length of the wine as well. There is a possibility that this wine may firm up nicely after bottling. (Drink between 2016-2035)

Pale yellow. Subtly complex aromas of quinine, lemon, mint and crushed stone; even more minerally than the Montee de Tonnerre. Offers the most inner-mouth tension by far to this point, showing a sharply chiseled quality to its grapefruit and mineral flavors. ("This site does great in warm years," noted Raveneau, as the portion of the vineyard at the rather flat top of the lieu-dit faces slightly northeast.) Fined-grained, dry and classic, but with the richness of the vintage. (ST)

Served blind. Pale fresh and clear in colour, with just a little touch of reduction on the nose. Of middling body on the palate, quite easy to enjoy, and though starting on the softer side it soon tightens up in the glass, holding together very well over several hours.
