TASTING NOTES

Hickinbotham Clarendon Vineyard’s history is deeply entwined with the evolution of premium Australian wine. Established in 1971 on the elevated, undulating terrain above McLaren Vale, this vineyard quickly earned recognition for its distinctive terroir and ability to produce fruit of remarkable balance and structure. The Peake, named in honour of South Australian pioneer Edward John Peake, is crafted only in exceptional vintages from the vineyard’s best parcels of Cabernet Sauvignon and Shiraz - a style that speaks to both tradition and innovation within Australian winemaking.

The 2015 vintage reflects an excellent growing season, with moderate temperatures and a long, slow ripening period encouraging remarkable flavour development. Hand-harvested fruit is handled with great care: whole berries are fermented with wild yeast, extraction is gentle to preserve finesse, and the wine is matured in a selection of fine French oak. The result is a Cabernet Shiraz blend that is bold and expressive, offering a layered bouquet of blackcurrant, plum and crushed herbs, with savoury undertones of graphite and spice. The palate shows superb concentration, fine-grained tannins and vibrant acidity, culminating in a persistent, harmonious finish. This is a wine of both depth and finesse - an impressive statement from one of Australia’s most distinctive vineyard sites, built to reward cellaring and a clear showcase of Hickinbotham’s dedication to quality.

A blend of 56% Cabernet Sauvignon and 44% Shiraz, the 2015 The Peake Cabernet Shiraz has a deep garnet-purple color and aprofound nose of baked cherries, blackberry coulis and blueberrycompote with hints of cedar, violets, dark chocolate and a waft of wild thyme. Full-bodied, rich and opulent, it has a seductivelycomplex and plushly textured palate, with tons of black fruit andspice layers, finishing long and perfumed.

If you wanted to show an overseas visitor an example of a ‘classic’ South Australian wine, then this would be a fine place to start. It’s medium to full bodied, almost svelte, with succulent but intense ripe tannin, truffle and grilled meat, blackcurrant and boysenberry, a little toast and smokiness, pitch-perfect acidity, and a finish of impeccable length and composition. The Hickinbotham Clarendon Vineyard, established in 1971, is now a part of the country’s wine heritage, supplying fruit to produce many iconic labels. Winemaker Charlie Seppelt takes the lead in shiraz production, making a markedly different style than many full-bodied McLaren Vale cousins made at lower altitudes. In 2015 the classic mix is 56/44 cabernet sauvignon and shiraz. The nose medley of black cherries, blueberry jam, and intense, floral notes leads to a super rich attack, with full-bodied and opulent black fruits. It is entirely devoid of that pesky acidity that can ruin so many of these wines in the back end. The tannin and acid balance at four years is suggesting this will be fine in the bottle for a decade and beyond. It lends a lot of respectability to what was once a proud Australian blend. The finish is long and spicy with dried notes of sagebrush and thyme.
