TASTING NOTES

Penfolds Bin 407 Cabernet Sauvignon 2020 exemplifies the pinnacle of Australian winemaking, crafted from premium grapes sourced across South Australia's renowned Barossa Valley, Coonawarra, and McLaren Vale regions. This blend is aged meticulously in both French and American oak, resulting in a wine that balances complexity with approachability.

Visually, the wine presents a dark ruby color with vibrant purple reflections. On the nose, it reveals a complex and expressive bouquet featuring enticing aromas of crème de cassis, ripe blackberries, mulberries, and refreshing spearmint. These fruit notes are beautifully layered with subtle spices such as toasted cumin, coriander seeds, bay leaf, and turmeric, complemented by hints of toasted coconut, cedar, and rich cocoa.

The palate is full-bodied and structured, delivering a sophisticated flavor profile that includes wild black cherries, cola, and sarsaparilla. Herbal nuances of sage leaves fried in nut-brown butter meld seamlessly with savory elements like grilled calves' liver and pistachio terrine. A fine graphite core underpins the wine’s depth, while the tannins are elegantly woven, providing a smooth texture. Balanced acidity ensures a lively finish that lingers gracefully.

This vintage is surprisingly approachable for its youth yet possesses the potential to age gracefully for two to three decades, developing even greater complexity over time. It pairs exquisitely with grilled meats, roasted game, and hearty pasta dishes, making it a versatile choice for sophisticated dining experiences.

Penfolds boasts a rich heritage dating back to 1844, positioning it among Australia’s most respected and historic wineries. With over 175 years of winemaking expertise, each bottle embodies their unwavering commitment to quality and excellence.

Critically acclaimed, the 2020 Bin 407 Cabernet Sauvignon earned 95 points from Campbell Mattinson, who praised its finesse, the harmonious integration of tannin and fruit, and the long, effortless finish. This recognition underscores the wine's superior craftsmanship and enduring appeal.

The grapes for this release were sourced from McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. 15 months in French (24% new) and American (12% new) oak hogsheads.

Those unmistakable hits of bay leaf, mint and tobacco. Bin 407 is always so unashamedly cabernet. Blackcurrant sweeps confidently in, along with boysenberry, along with sweet herbs, cloves, green olives and cocoa. I love the finesse of both the tannin and the fruit, the long, effortless draw of the finish. Beautiful wine.

Dark ruby with purple reflections and faint ochre brightening on the rim. A whole array of intense aromas with eucalyptus, mint, blackberries, cassis and liquorice. Juicy and tightly meshed on the palate, fresh blackberries and ripe supporting tannins. A long finish with chocolate and mineral notes. Already approachable, good development and certain ageing potential.

As with the St Henri shiraz, with five regions in play here this is all about varietal expression, measured by a mix of warmer to cooler districts. That allows a broad brush of characters to show themselves here in the immediate cabernet aromas and flavours of cassis, dark berries and fruits of the forest that then get a lovely little tickle of mint derived no doubt from the cooler sources in the Limestone Coast zone. Fifteen months in a mix of French and American oak, a minority new, have offered another layer as well, along the lines of cedar and dark chocolate. There’s lots to love here, from the vibrant cabernet fruit profile to the succulent and expressive tannins that are juicy yet supportive, the palate even and beautifully balanced in its final hurrahs. 96 points.
