The grapes are harvested in the cool of night, gently pressed, and fermented in stainless steel tanks at low temperatures using neutral yeasts. This careful process avoids oak influence and malolactic fermentation, allowing the wine’s natural varietal character to shine through with remarkable focus.

On the nose, Bin 51 reveals fresh lime, lemon zest, delicate white flowers, and a subtle minerality reminiscent of crushed quartz. The palate is taut and finely etched, layered with citrus, green apple, and intriguing hints of bath salts and talc. The finish is long, dry, and shimmering with vibrant acidity, striking a perfect balance between drive and delicacy. While youthful and racy now, this Riesling is designed to evolve gracefully over the next 10 to 15 years, developing complex nuances of toastiness and honeyed notes without losing its crisp core.

Pale colour. Fragrant pure lime, tonic water, grapefruit, verbena aromas and flavours, lovely chalky textures, superb mid-palate volume and fresh bell clear acidity. Finishes crisp and long with a light chalky/ al-dente plume. A hint of bush garrigue. Very Evocative.

Pale straw with a flash of green in the glass and a wonderfully pure aromatic profile of freshly squeezed limes, Bickford's lime cordial, lemongrass, Christmas lily, apple sorbet, makrut lime leaf, green apple and citrus rind. Taut yet expressive with citrus and apple fruits flowing freely on the palate, an impressive tubular palate shape and a sapid minerality. Finishes long, taut and impressively pure. The Bin 51 has been in fine form lately and this is another great showing.

While enduring drought conditions led to smaller yields during the ‘25 vintage, the big win is Bin 51’s impressive purity of expression and scintillating fresh acidity. Starts aromatically vibrant – pure Eden Valley – with its scent of apple blossom, spring flowers and citrus with bath salts, yellow apple. Succulent, juicy and, at times, tart like sucking on a grapefruit, it bursts with youthful energy and citrus intensity across the palate with a lemon sorbet brightness.

Yeasty new-wine aromas, fresh pastry, grated lemon peel, citrus blossoms, the palate very fresh and bright, but the acidity is soft and gentle, not assertive in its youth. Lovely wine already, even better when the yeasty esters settle down.
