Crafted on triple pot stills - a rare and telling choice - this whisky is designed not to shout, but to glide. Its base DNA draws from ex-shochu distilling culture, and yet its gaze is firmly international. The result is not a whisky trying to emulate Scotch or mimic Nikka - it is its own creature, coastal and contemplative.
On the nose, the first aromas are salt-kissed melon, white grape, and a soft caramel mist - like walking through a fruit market at dusk with sea breeze in your hair. There's a honeyed citrus note too - think yuzu marmalade or candied lemon peel, restrained yet luminous. Beneath it all, a faint wisp of driftwood smoke and faint sandalwood, like incense caught in the wind.
Take a sip and the palate unfolds with elegant progression: milk tea, roasted chestnut, and a buttery texture that feels almost like panna cotta in liquid form. A wave of vanilla oak swells mid-palate, buoyed by light spice - cinnamon bark and a touch of white pepper. But true to its name, nothing juts out. Everything is rounded, smoothed, and serene.
The finish is a gentle tide pulling back to sea: pear skin, faint licorice, and that ever-present mellowing effect of the coastal maturation - humid, warm, and ever so patient. It doesn't end so much as fade, like sunlight behind a paper screen.
